
Ingredients:
- 1 1/2 cups of flour
- 3/4 cup of sugar
- 1/4 teaspoon of salt
- 2 heaping teaspoons of baking powder
- 1/3 cup of vegetable oil
- 1 egg
- 1/2 cup of milk
- 1/2 teaspoon of vanilla extract
- 1 cup of sliced VanGo strawberries
Steps:
- preheat oven to 400 degrees
- place paper cupcake liners in tin
- mix dry ingredients
- add wet ingredients and mix through with dry ingredients
- gently fold in VanGo strawberries
- fill cupcake liners 3/4 full with batter
- sprinkle sugar on top of each muffin
- remove liner from any empty tins and fill 1/4 way with water
- place in oven and bake for 20 minutes or to slightly golden
- enjoy
